"How helpful would it be to you if moving a piece instantly started your opponent's time?"
Do you mean that moving would start the opponents clock OTB? Because online moving already starts the clock, right?
If you are planning to remove the physical clock from OTB chess and replace it with a sensor board that automatically starts the clock when the opponents move is done... then I say go for it.
It would make OTB blitz play much faster, more moves would be played, also it would take away cheating with the chess clock (where you move before your clock has been started, or start opponents time when it is your turn or physically prevent opponent from pressing the clock, I have seen these all and much more in OTB blitz tournaments).
